Chicken Pasta Salad

This salad is packed full of nutrition - broccoli is rich in antioxidants, pasta is a great source of carbohydrate and chicken is an excellent low fat source of protein. The dressing for the salad is really delicious, and the bright colours of the tomatoes and broccoli  will be sure to tempt even a fussy toddler!

Serves 4

100g fusilli pasta100g broccoli heads
100g shredded cooked chicken125g tinned sweetcorn
8 cherry tomatoes, halved2 spring onions, finely chopped
4 tbsp light olive oil11/2tbsp runny honey
11/2 tbsp soy sauce11/2 tbsp lemon juice

1. Cook the pasta, drain and rinse in cold water.
2. Steam the brocolli for about 3-5mins until just tender
3. Transfer pasta to a large bowl, add the shredded chicken (leftover roast chicken is perfect) and cherry tomatoes.
4. Whisk together all the salad dressing ingredients, add a bit of pepper and toss the salad with the dressing.
