Carrot Muffins Recipe


Healthy muffins for kids are hard to come by, but this one is healthy and a real treat!

Makes 12.

Ingredients 
1 cup wholewheat flour1 cup white flour
3/4cup brown sugar2 tsp baking powder
1 tsp baking soda1/2 tsp salt
3 eggs1 tsp cinnamon
1/2 cup oil1 tsp vanilla essence
1 cup carrot puree

Method
Mix all ingredients until moistened. Bake in 180 oven for 15-20 minutes or until cooked through  If you wish, ice with 115g light cream cheese, 1/3 cup icing sugar and 1/2 tsp vanilla essence blended.
