Healthy muffins for kids are hard to come by, but this one is healthy and a real treat!
|1 cup wholewheat flour||1 cup white flour|
|3/4cup brown sugar||2 tsp baking powder|
|1 tsp baking soda||1/2 tsp salt|
|3 eggs||1 tsp cinnamon|
|1/2 cup oil||1 tsp vanilla essence|
|1 cup carrot puree|
Mix all ingredients until moistened. Bake in 180 oven for 15-20 minutes or until cooked through If you wish, ice with 115g light cream cheese, 1/3 cup icing sugar and 1/2 tsp vanilla essence blended.
